"Many recipes call for roasted and peeled peppers. Here are a couple of methods.

1. Heat broiler. Cut peppers into quarters lengthwise. Get rid of the stems, seeds, and ribs. Place peppers skin side up on broiler pan, about 2 inches from the heat. Broil the peppers until they blister � this should take about 10 to 12 minutes. Take peppers from oven, place on large plate or bowl until peppers are cool enough to handle and peel.

2. If you use a gas stove, lay peppers on their sides one to a burner rack. Turn flame on high. Char the peppers using a tongs to turn them over. Let pepper char � about 8 minutes. Handling carefully, place blackened peppers in a bowl to cool. Peel peppers, cut off tops, remove and discard seeds and ribs.

CAUTION SHOULD BE TAKEN IN ANY METHOD OF ROASTING PEPPERS. I use rubber gloves when working with the peppers, and especially when roasting chili peppers."
